Handpicked dry farmed organically grown grapes from 60-100 year old vines, with nothing added – 5 days maceration in open-topped vessels before spontaneous fermentation in stainless steel commences with wild yeasts – fermantation takes a month to complete. After 9 months in the stainless steel tanks the wine is bottled unfined and unfiltered.
