Our mission is simple: we make wines with no interference whatsoever. No pesticides, no synthetic additives, no added yeast, no temperature control, no enzymes. Identity is the centre of gravity in our winemaking. Identity of terroir: soil composition, micro-climate, varieties (Furmint and Hárslevelű), and of the region: a complex variety of minerals and bedrocks as a legacy of over four hundred extinct volcanic cones, giving hundreds of different terroirs and thousands of micro-regions. Timing of our harvest is key: we prefer low alcohol levels to enable us to achieve a level of complexity, clarity and balance that expresses the full potential of dry Furmint and Hárslevelű. We aim to release most of our wines with at least 3 years of ageing.
